If you're like me, you love the idea of spending a slow afternoon surrounded by your dreamy subway tile and marble clad kitchen while baking that editorial inspired recipe you snagged from Food52 in your beautiful Le Creuset , but somebody pause the Bon Iver and let's get real for a second.....

 

I don't even have time to empty the dishwasher most days MUCH LESS buy, prepare, cook and clean up mounds of baking stuff all the time. (Run a flower biz in your kitchen and you will basically never want to look at that room again.)  I love to cook, but that is because it is more of a loose art. Add a pinch of this and a touch of that and boom, let the compliments roll. With baking, it's an actual science and lets just say I might need some continuing ed in that department! That being said, apps are where I really shine. It's my thing and I am always looking for a new and easy recipe so I decided to share ones that I love and have success with. Today, let me introduce you to the white chocolate confetti blondie. Drops mic...

 

 

I love that this recipe does not use a bit of butter (gasp), it was not costly and it was FAST. You don't need a fancy hand mixer or any special knowledge. It is perfect for kids and adults and it's just plain fun! Maybe if some certain politicians ate more confetti blondies they would take it down a notch! Simple pleasures people. Now, it's your turn!

 

 

 

I N G R E D I E N T S

 

-1 box yellow or vanilla cake mix ( I'm a yellow kind of gal)

-1/4 cup vegetable or canola oil ( I used vegetable bc I recently read this article - thoughts?)

-1 large egg

-1/3 cup milk ( I used skim - next time trying almond!)

-1/2 cup sprinkles ( or more! you do you + live your best life, friends)

-1/2 cup white chocolate chips ( see commentary on previous line)

 

D I R E C T I O N S

 

- Preheat oven to 350F

- Spray 11 x 7 baking pan w/ nonstick spray

- Combine first 4 ingredients in large bowl ( you can just use a fork!)

*IMPORTANT - slowly pour in the milk, mixing between each pour. I did four pours. You want the batter to be dense + thick.

After the above ingredients have been mixed - add sprinkles + white chocolate chips. I like using two different kinds of sprinkles, but don't use black because it will color your batter. 

- Pour mixture into prepared pan, add sprinkles to top, bake 25-20 minutes ( until edges start to brown)

-Allow to cool for 30 minutes so that the center sets - these are gooey ( aka delicious).

If you have a few left over - throw them in a cute bag and tape it up like an envelope. Leave it in a friend's mailbox for a sweet treat. Let me know how yours turn out and if you have any favorite recipes I should steal!
